Cheshire
Appleby's Red. A lovely cheese, moist crumbly slightly sweet taste. There are others but this is what we believe a good Cheshire cheese should taste like.- Non vegetarian

Cooleeney
Soft brie style cheese, buttery when young then developing into a full tasting cheese without the bitterness often seen in English versions. We mature it until it has a lovely soft coating. Our favourite non French version of Brie.

Cheddar
Our farmhouse cheddar is a great cheese - the equivalent of our 'house wine' - and our reputation is based on it. If you think this is good then that is the quality we want for all our cheeses. The cheddars are kept by us until they are about 1 year old to produce a creamy well rounded flavour…..we could go on…..fantastic.

Cashel Blue
Made in Co Tipperary in the Republic of Ireland. A moist, creamy flavour with a hint of saltiness. Far more continental in style than traditional British Blues.

Double Gloucester
Made by Diana Smart. The only resemblance to the commercial offerings is the name. This cheese is the very best Double Gloucester. A hard cheese with a strong, full flavour and lovely colour……simply the best.

Hereford Hop
Toasted hops on the outside of the cheese give a slightly bitter edge that encase a creamy strong cheese with a slight hint of lemon. Excellent with a ploughmans and especially good with beer.

Lancashire Bomb
Tasty Lancashire cheese in a wax coat - this is no gimmick but a traditional way of making cheese to achieve its unique crumbly texture and strong but not acidic flavour. A truly excellent Lancashire cheese. Once opened it will keep for up to a month in the fridge.

Lincolnshire Poacher
This has aged for at least 18 months to a deep, sharp, nutty flavour - our alternative to the cheddar for those who want a stronger flavour.

Ribblesdale Goat
Creamy, smooth with a gentle goat taste, almost a hint of lemon in the palate. A goats cheese for those not wanting to be overpowered. This cheese melts well and is good in cooked dishes.

Stilton Half Stiltons
What can you say - people have their favourites, but this is ours, made at Long Clawson. A creamy full flavour which is never bitter, light years away from most stilton sold today.
